(Shrimp Fried Rice with Basil)

About the Recipe
This very common dish, a favorite amoung the Thais, is the ultimate favorite of Khun Wit. The secret is the extra flavourful Thai Holy Basil Leaves (Krapao) which are unfortunately hard to find in North American Asian markets. Use Thai Basil (Horapa) as a substitute, or if you have to, European Sweet Basil, and it is still a dish to die for.

    fill pitcher full of water
    2 tablespoons vegetable oil
    3 cloves garlic, minced
    1 tablespoon chopped fresh Thai red chili peppers
    8 ounces de-shelled shrimp
    2 cups cold cooked rice
    1 tablespoon sugar
    1 tablespoon fish sauce
    1 tablespoon soy sauce
    2 tablespoons chopped shallots
    1/3 cup Thai holy basil (regular basil ok)
    1 tablespoon chopped fresh cilantro
